I can’t believe we’re two months into CSA season. Our weekly box selection is definitely getting interesting:
- okra
- green bush beans
- radishes
- little leaf cucumbers
- Japanese cucumber
- zucchini
- red Italian onion
- tomatoes
- Swiss chard
This week’s “what in the heck do I do with this?” veggie: Okra. I’ve never eaten it, let alone cooked with it.
Like I said, this is getting interesting.
Okra is really hard to get my kids to eat. My best bet is throwing it into a curry. I’ve also dehydrated it to add to soups later in the year.
I have never cooked okra. Doesn’t it get slippery and slimy during the fresh and cooked stage? Can’t wait to see what you do with it.
you can roast them in the oven and make okra fries!
